Coat pork chops with salt, pepper and paprika. Rub seasonings into pork chop and make sure it is well coated.
Heat olive oil in skillet on medium high heat.
Add pork chops to the pan and sear for 3-5 mins on each side, depending on thickness. Internal temp should be at 140 degrees. Once done remove and set aside for later.
In the same skillet, add garlic and butter and stir until fragrant, about 1 minute.
Add in remaining seasonings and chicken broth. Continue to stir/whisk until well blended. Turn heat to low-med and simmer until it reduces a little.
Add cream to the mixture and bring to a boil, stirring frequently to avoid burning.
Add spinach and mix. Let cook until wilted, about 2-3 minutes.
Add Parmesan cheese and whisk/stir quickly to avoid the cheese clumping and/or burning. Continue to simmer for another 2-3 minutes.
Add pork chops back to the skillet and smother with sauce. Let simmer for 2-3 minutes then remove skillet from heat. Top with parsley. Serve over a bed of rice, or with roasted potatoes.
