Ingredients

  • 3 pork chops boneless
  • 1 tsp paprika
  • salt & pepper to taste
  • olive oil for searing
  • 2 tbsp butter
  • 6 tsp minced garlic
  • 1/3 cup chicken broth
  • 1 3/4 cup heavy whipping cream or heavy cream/half & half
  • 2 cup baby spinach
  • 2 tsp Italian seasoning
  • 1 tsp crushed red pepper flakes
  • 2 tsp garlic powder
  • 1 tsp onion powder
  • 1/4 cup Parmesan cheese grated
  • 1 tsp parsley for garnish

Instructions

  • Coat pork chops with salt, pepper and paprika. Rub seasonings into pork chop and make sure it is well coated.
  • Heat olive oil in skillet on medium high heat.
  • Add pork chops to the pan and sear for 3-5 mins on each side, depending on thickness. Internal temp should be at 140 degrees. Once done remove and set aside for later.
  • In the same skillet, add garlic and butter and stir until fragrant, about 1 minute.
  • Add in remaining seasonings and chicken broth. Continue to stir/whisk until well blended. Turn heat to low-med and simmer until it reduces a little.
  • Add cream to the mixture and bring to a boil, stirring frequently to avoid burning.
  • Add spinach and mix. Let cook until wilted, about 2-3 minutes.
  • Add Parmesan cheese and whisk/stir quickly to avoid the cheese clumping and/or burning. Continue to simmer for another 2-3 minutes.
  • Add pork chops back to the skillet and smother with sauce. Let simmer for 2-3 minutes then remove skillet from heat. Top with parsley. Serve over a bed of rice, or with roasted potatoes.
