Hi Y’all! Life has been pretty weird lately. We are on day 17 of “social distancing”/quarantine and I think it is starting to wear on us a little. Going to the grocery store is a task and we are still super apprehensive but will make about 1 trip a week and try to stock up on as much stuff as we can. They didn’t have any pasta sauce this last trip, so I was trying to think of ways to still make a pasta, since we have so much noodles! I decided that a shrimp scampi type dish would be yummy, so I rummaged through my pantry and thew some stuff together, and the Garlic Shrimp Pasta was born! This actually turned out really, really yummy and I wish that I had made more- lol. It was super easy and I will definitely be adding it to my list of “easy & quick recipes”. This dish would make a perfect busy weeknight meal!
You could always adjust the recipe how you see fit, of course. I think next time I am going to add more butter to make it a little more saucy, and well because butter makes everything better!
The ingredients are common and you probably already have everything you need in your pantry. Perfect for a quarantine!
Anyone else just obsessed with the smell of cooking garlic? Ahhhh it is just amazing. You want to make sure that you don’t brown the garlic for this one, just saute about 30 seconds to make an aroma, then add the remaining ingredients.
I personally prefer wheat noodles to regular noodles. Yes they are *better* for you, but I think they actually taste better, and they are a little thinner. If I had angel hair pasta on deck, I would have used that instead.

Garlic Shrimp Pasta
Ingredients
- 8 oz Wheat Noodles
- 1/2 lb Shrimp Peeled & Shells Off
- 3 tbsp Butter
- 2 tbsp Minced Garlic
- 1/2 tbsp Red Pepper Flakes
- 1/2 tbsp Italian Seasoning
- 1/2 tbsp Parsley
- 2 tbs Grated Parmesan
- Salt & Pepper to taste
- 1/4 c Pasta Water from the cooked pasta
Instructions
- Cook noodles according to packaging & set aside. Remove 1/4 cup of the pasta water and set aside.
- In a skillet, add 2 tbsp of olive oil and the garlic, saute for 30 seconds, do not brown the garlic.
- Add shrimp, red pepper flakes, Italian seasoning, salt and pepper to taste. Saute until the shrimp have turned white and are done cooking. About 3 mins per side.
- Add in the noodles, the pasta water, 1 tbsp of olive oil, grated Parmesan and the butter. Mix well.
- Plate and serve, top with more Parmesan if desired. Serve alone or with garlic bread.
Quick and easy am I right?! This Garlic Shrimp Pasta recipe is definitely going on my “keep” list. Pasta night is Cody’s favorite night, so with a recipe this easy, I won’t complain. Happy Cooking!
