What’s your favorite fish to eat? Mine happens to be Salmon. I know there are many people out there that are not a huge fan, and I just tell them, “You just haven’t had it made the right way!” I have tried many different recipes for my salmon dishes over the years, but this one is my go-to. Not to mention, I am a sucker for “Cajun” anything. It’s easy, tasty and a little spicy! If you are looking for a new weeknight recipe then you are in luck! This easy Cajun salmon recipe only takes 20 minutes to cook and about 5 minutes to prepare, what’s easier than that??
Ingredients:
5oz salmon filet (one per person)
Salt & Pepper
Directions:
Preheat your oven to 425 degrees and spray Pam on a sheet pan (I go ahead and spray it even if the pan is non-stick)
In a small bowl/ramekin mix together the Bread Crumbs, Paprika, Garlic Powder, Tony Chachere’s, Italian Seasoning, Salt & Pepper. Usually I make 2 filets so I do about 1tsp of each seasoning and then ½ tsp of the Salt & Pepper, then 1-2 Tbs of Bread Crumbs. If you have some of the rub left over that is fine, just throw it away when you are done.
Take your lemon juice and do a squirt or two on each filet. This will help cut out the fishy taste that salmon is known for.
Take ½ table spoon of minced garlic and rub all over the top and sides of the filet. If you want to use more, go right ahead, I understand garlic is LYFE.
Once that is done, you will want to either use a spoon to get some of the rub or you can just pour directly from the bowl. I use a spoon do evenly sprinkle the rub on to the filet and then also use the spoon to rub it all in really nicely (I don’t like to touch raw food with my hands, yes I know I am weird, I avoid it at all costs, lol). You want the rub to be fully coating the filet without having any access just piled on; it needs to all be saturated/damp looking.
Once your salmon is coated, throw her in the oven for 20 minutes! See, I told you this was an easy Cajun salmon recipe! Our favorite sides for this dish are rice, asparagus, roasted potatoes, or just some mixed veggies. Enjoy!
