OK- I am so sorry this took 2 days to get up, y’all! LOL I received so many messages asking for this full recipe and well- life took over and I finally found time to type it all up. I have made these creamy smothered pork chops a handful of times and there always a hit with Cody (he is blatantly honest when it comes to the meals I make, lol) and he said it goes in the top 5, haha. So it’s a good one!

Creamy Smothered Pork Chops
Ingredients
- 3 pork chops boneless
- 1 tsp paprika
- salt & pepper to taste
- olive oil for searing
- 2 tbsp butter
- 6 tsp minced garlic
- 1/3 cup chicken broth
- 1 3/4 cup heavy whipping cream or heavy cream/half & half
- 2 cup baby spinach
- 2 tsp Italian seasoning
- 1 tsp crushed red pepper flakes
- 2 tsp garlic powder
- 1 tsp onion powder
- 1/4 cup Parmesan cheese grated
- 1 tsp parsley for garnish
Instructions
- Coat pork chops with salt, pepper and paprika. Rub seasonings into pork chop and make sure it is well coated.
- Heat olive oil in skillet on medium high heat.
- Add pork chops to the pan and sear for 3-5 mins on each side, depending on thickness. Internal temp should be at 140 degrees. Once done remove and set aside for later.
- In the same skillet, add garlic and butter and stir until fragrant, about 1 minute.
- Add in remaining seasonings and chicken broth. Continue to stir/whisk until well blended. Turn heat to low-med and simmer until it reduces a little.
- Add cream to the mixture and bring to a boil, stirring frequently to avoid burning.
- Add spinach and mix. Let cook until wilted, about 2-3 minutes.
- Add Parmesan cheese and whisk/stir quickly to avoid the cheese clumping and/or burning. Continue to simmer for another 2-3 minutes.
- Add pork chops back to the skillet and smother with sauce. Let simmer for 2-3 minutes then remove skillet from heat. Top with parsley. Serve over a bed of rice, or with roasted potatoes.
