I love a good soup. Especially if it’s an easy one. I decided to make this Hearty Hamburger & Vegetable Soup recipe while we were on “quarantine” during the COVID-19 craziness. I had a bunch of random canned goods, frozen items and TONS of frozen meat stocked up and ready to use. I was trying to think of different ways to use the hamburger meat without having to make, well, hamburgers. I figured a soup would be a good option because then I would have lot’s of left overs for Cody and I!
Let me start off by saying, I actually impressed myself with this one. I really didn’t know what to expect. I mean, I’ve made vegetable soup before, but the thought of just throwing in some ground beef didn’t really come naturally to me. If you know me personally, you know that I usually choose ground turkey over beef. For one, it’s leaner and for two, it tastes great.
I am pretty sure that Cody got seconds the night we ate this and then he ate more for lunch the next day, it was THAT good. So, next time you are in a crunch or in the middle of a global pandemic and have tons of random ingredients in your pantry, try this Hearty Hamburger & Vegetable Soup recipe out! You won’t be disappointed!
Ingredients
1-1.5 lbs Ground Beef
2 tsp Minced Garlic chopped
1 Yellow Onion
3 Russet Potatoes
2 can Beef Broth (ow sodium
1 can Tomato Soup or Tomato Bisque
1 can Petite Diced Tomatoes
2 tbsp Worcestershire Sauce
1 lb Frozen Mixed Vegetables
1 tbsp Garlic Powder
1 tbsp Italian Seasoning
1 tsp Parsley
Directions
Chop potatoes and and onion.
In a soup pot, add chopped onion, minced garlic and beef. Brown until no pink is visible.
Season meat with garlic powder, Italian seasoning, parsley.
Once beef is finished browning, add remaining ingredients: beef broth, Worcestershire sauce, tomato soup, diced tomatoes, and frozen mixed vegetables.
Bring soup mixture to a boil.
Once boiling, cover and simmer for 40 minutes
Let cool and serve.
